Breakfast: Cinnamon Chia Yogurt Parfait with Warm Apples

🧾 Ingredients

  • ½ cup plain Greek yogurt (or plant-based alternative)

  • 2 tbsp chia seeds

  • ¼ cup unsweetened almond milk

  • 1 small apple, diced

  • ½ tsp cinnamon

  • 1 tsp maple syrup or honey (optional)

  • 1 tbsp chopped walnuts or almonds

  • Pinch of salt

🍳 Method

  1. Mix chia & yogurt
    The night before (or at least 30 mins ahead), stir chia seeds into yogurt and almond milk. Let thicken in the fridge.

  2. Warm the apples
    Sauté diced apple in a small pan with cinnamon, pinch of salt, and a splash of water. Cook 3–4 mins until soft and glossy. Stir in sweetener if desired.

  3. Assemble the parfait
    Layer chia-yogurt, warm cinnamon apples, and nuts in a glass or bowl. Top with a few extra apple pieces or seeds for texture.
